Distilled from sugar cane, cachaça is the national spirit of Brazil--more a part of Brazilian culture than bourbon is to the U.S. It is often (and inaccurately) called "Brazilian Rum" but it, in fact, has a rich history that pre-dates rum by nearly a century. Though inferior products imported to the U.S. early on gave cachaça a reputation as a rough, cheap liquor, premium brands using artesenal processes are starting to make themselves known in Brazil, the U.S. and elsewhere. These cachaças stand up to the finest spirits of any variety.
