The menu is all vegetarian (but plenty filling!) and mostly vegan.
For generations, my family brewed their own soy sauce and made their tofu from scratch. They had to...they were in the middle of Colombia. My Tia Lilia Kuratomi de Tsuchiya shared her recipes with me during my last visit to Colombia. One of the few women I know who still makes her arepas and tofu from scratch, Tia Lilia’s repertoire also features such crossover hits as traditional Japanese desserts made with yucca flour and grilled corn doused in a sweet soy glaze. – Sita Kuratomi Bhaumik
